What exactly is the magic of scoring? It all comes down to control.

When your dough hits the heat of the oven, it experiences a burst of rapid expansion (often called oven spring). Without a score—a shallow cut on the surface—the crust might tear unpredictably in the weakest spot.

 

Scoring does two critical things:

 

Controls Expansion: It provides a planned release point for the gases, helping to control the expansion of your bread during baking.

 

Develops Crust: By controlling the expansion, you allow the loaf to rise properly and develop a beautiful crust.

 

It also, of course, adds a decorative touch to your loaf, giving you a chance to create beautiful patterns!

Making a score that truly opens up the dough can be tricky. While attempting a little scoring art, we found that sometimes your standard kitchen knife just isn't sharp or precise enough.
